Lingcod is a large bottom-dwelling fish found only on the west coast of North America. It has mild white flesh and is very versatile in terms of cooking. Similar to halibut or cod, it can be seared or breaded, or used in nearly any recipe that calls for white fish.
Lingcod were overfished in the past, but have since recovered due to regulations put in place in the 1990s, and are again common along the Oregon coast.
